Mille-Feuille 法式千层酥 (拿破仑)

Today, we are into the classic French pastry, the Mille Feuille, also known as Napoleon. It’s made of the layers of custard creams and puff pastry, making it an irresistible dessert for everyone. You can put different topping on it but today, we are putting some berries such as strawberry, blue berries as well as raspberry. It is so beautiful yet tasty pastry that you can make at home. Ingredients

  • 3 eggs
  • 40g sugar
  • 20g corn starch
  • 250ml fresh milk
  • 1tsp vanilla extract
  • 4 frozen pastry dough

Preparing custard cream

  1. Mix 3 eggs, 40g of sugar and 20g corn starch.
  2. Heat 250ml fresh milk and 1tsp vanilla extract to boil.
  3. Gradually mix 1/3 of hot milk into the egg mixture. Whisk evenly.
  4. Pour the egg mixture into the hot milk and cook over medium-low heat. Constantly stirring until thickened.
  5. Pour the custard into a container and cover with plastic wrap.
  6. Chill in fridge for 2 hours.

Preparing pastry

  1. Put the pastry dough on a parchment paper. Dock the pastry dough.
  2. Cover the dough with another parchment paper and press with some objects.
  3. Baked in the pre-heated oven with 200ºC for 15 minutes.
  4. After chilled, trim the edges of the pastry.
  5. Cut the pastry into half (equal size).

Assembling Mille-Feuille

  1. Pipe a layer of custard cream on a pastry.
  2. Place another pastry on the custard cream and pipe a layer of custard cream again.
  3. Lastly, place another pastry on the custard cream and pipe a layer of custard cream.
  4. Place some berries on the custard.
  5. Spread some icing sugar on the Mille-Feuille.

  • 3 鸡蛋
  • 40g 白糖
  • 20g 玉米淀粉

制作卡仕达酱

  1. 搅拌3颗鸡蛋,40g白糖和20g玉米淀粉。
  2. 将250ml鲜奶加热,加入香草精。
  3. 慢慢加入1/3热鲜奶入蛋液中,持续搅拌。
  4. 将蛋液倒入鲜奶中,以中火煮热。搅拌至浓稠。
  5. 将卡仕达酱倒入容器里,盖上保鲜膜。
  6. 放入冰箱冷却2小时。

制作酥皮

  1. 把酥皮放在烘培纸上,用叉子按压。
  2. 盖上另一层烘培纸后,用一些物体按压。
  3. 放入预热烤箱以200ºC烘烤15分钟。
  4. 冷却后,把边边切掉。
  5. 再把酥皮切半。

组装法式千层酥

  1. 在酥皮上挤上卡仕达酱。
  2. 再放上一层酥皮后,再挤上卡仕达酱。
  3. 最后,再放上一层酥皮后,再挤上卡仕达酱。
  4. 在卡仕达酱上放一些莓果。
  5. 撒上以一些糖粉。
